A stumping happens when the wicket-keeper receives the ball and breaks the wicket with the batter out of the crease, while the batter is not attempting a run. The bowler takes the wicket and the keeper is credited with the stumping.
A batter cannot be stumped off a no-ball. A wide is not a no-ball, so a stumping off a wide is possible.
